Lentil Wild Rice Salad with Bean Sprouts

Ingredients
- 5 cups California Wild Rice cooked
- 2 cups lentils
- 1 cup spanish onion minced
- 7 oz bean sprouts
- Dressing:
- 1 cup fresh-squeezed orange juice
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tsp finely minced orange peel
- 2 tsp curry powder
Instructions
- Carefully mix rice, lentils, onion and bean sprouts. Combine dressing ingredients; season to taste. Sir dressing into salad ingredients and chill ½ hour. Toss lightly and serve with orange slices
- Dressing: Salt and pepper to taste. Add orange slices as garnish
